Yum – comfort food on the road. This recipe will delight your tastebuds and fill you up. Try it on a day you have a long hike planned. It’s hearty and filling – and so unbelievably easy. You make it in just one dish. No pots and pans to clean.

This Hot Logic Mini recipe uses only three ingredients plus water. Just set it up in your cooker and in a few hours, presto-bingo – dinner is served.

The only watch out with this dish is to adjust the cooking time for the pasta. I used a narrow ziti and it cooked to al dente in the three hours I used. Smaller shells or macaroni will likely take less time, so start checking at 2 hours.

Update: Are you worried about the pasta cooking just right? Well, I’ve now solved this issue with my new favorite product. Barilla has a collection of ready-cooked pasta that is perfect for Hot Logic cooking. It comes in various shapes, so just pick your favorite and add it about 10 minutes before you want to eat. It’s a bit pricey (for pasta) but for van-cooking it’s perfect.

The meatballs, if starting from frozen, thaw and heat up in about two hours. Fresh meatballs cook in about an hour, but won’t burn or dry out cooking longer, so the overall cooking time can stay the same.

Let’s cook

Place the meatballs in the glass dish.

Add the sauce and water. If you are using Barilla’s ready cooked pasta omit the water and add your pasta 10 minutes before serving.

Cover and cook in the Hot Logic Mini for 3 hours.

Add the pasta submerging each piece under the sauce, as much as possible – not like that straggler popping up on the right. Cook for another 30 minutes, or until the pasta is al dente.

Description

A rich hearty meal for one. Perfect after a long hike when you want both carbs and protein.


Ingredients

Scale

6 oz frozen meatballs (6, 1 oz meatballs)
1 cup pasta sauce (any)
1/2 cup water 
1/2 cup dry ziti pasta 


Instructions

Combine meatballs, sauce, and water (if using dry pasta) in a glass dish
Cover and cook in Hot Logic for 3 hours
Add the pasta, making sure it is submerged under the sauce
Cook an additional 30 minutes.
Check pasta for doneness, cooking in additional 15-minute increments until done to your taste

The cooking time for the pasta varies depending on your pasta shape, size, and brand.  It cooks best by this method when the shapes are small because they need to be submerged in the sauce to cook properly.

I used store-bought frozen meatballs but you can mix up your own, or buy just what you need, fresh from the meat department.  If you buy large meatballs, reform them into a 1-inch diameter for better cooking.  If they are fresh (not frozen), check for doneness after 2 hours.

If using precooked pasta, omit the 1/2 cup water and use 1 cup of precooked pasta.
